Replaced the workflow badges with a PyPI version badge - I think this is more relevant for folks than workflow badges? Thoughts?

This PR removes codecov references and coverage badges from the README.
We'll keep coverage reporting in log outputs, but I'm not sure we need to surface these otherwise.
